Introduction

I make two versions of chicken fried rice. This one with white rice has eggs and white onion. The other version with brown rice has fresh red bell pepper and green onion. Ingredients

    1 3/4 lb boneless skinless chicken breast, trimmed
    3 cups uncooked white rice
    6 Tbs light butter
    6 large eggs
    2 2/3 cup peas
    2 cups julienne carrots
    2 cups chopped broccoli
    2 cups chopped white onion
    6 oz soy sauce
    2 oz lemon juice


Tips

Cooking time is based on pre-cooked rice.


Directions

Cook rice according to package directions, using 3 Tbs light butter. Set aside.
Scramble the eggs, season with fresh ground black pepper and cook over medium heat until the eggs are set.
Add chopped vegetables and remaining butter.
Cook over medium heat, stirring frequently, until carrots are almost tender. Set aside.
Cube chicken breast to 3/4" dice.
In a non-stick skillet, brown chicken breast in 2 oz lemon juice.
Season with fresh ground black pepper.
Add rice, eggs and vegetables.


Serving Size: makes eleven 2-cup servings
