A revamped recipe of an old favorite. To make oat flour, just put your oats thru the Cuisinart. Make a nice tupperware full. You can put oat flour in pancakes too. Ingredients

3/4 cup Crisco
1 1/4 cup firmly packed light brown sugar
1/4 cup egg beaters
1/3 cup skim milk
1 1/2 tsp vanilla
3 cups uncooked rolled oats
1/2 cup oat flour**
1/2 cup white flour
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1 cup craisins
1 cup slivered almonds
Directions
Preheat oven to 375. Prepare 4 sheets of parchment paper to hold 12 cookies per sheet
Combine crisco, brown sugar, egg, milk, & vanilla in a mixing bowl. Beat at medium speed until well blended and fluffy looking.
In a separate bowl, combine oats, flour, oat flour, baking soda, salt & cinnamon.
Mix dry into wet at low speed until well blended.
Add craisins and almonds. mix at low speed
Drop large tablespoons 2 inches apart onto parchment paper.
Bake one baking sheet ata time for 10 to 12 minutes or until lightly browned.
**Oat flour - easy as pie to do. Put the oats through the Cuisinart until light and fluffy. Store well in an airtight container. Can be used in pancakes as well for a little extra health kick. Basic ratio is 1 part oat flour to 4 part white flour and add baking powder to help it rise, but I've done it the opposite for pancakes and they turn out just fine...It's a fun and healthy experiment to try out. Google oats and find some new recipes out there!
