Introduction

I substituted equivalent of dry, cooked beans with ratio 2:1 of black to pinto beans I substituted equivalent of dry, cooked beans with ratio 2:1 of black to pinto beans

Ingredients

    1 large onion, chopped
    2 small green peppers ( 1 medium) chopped
    I use 1 large
    Coconut oil spray
    1 lb extra lean ground turkey (or beef)
    1 tsp. garlic powder
    1 tsp. onion powder
    salt and pepper
    2 (15 oz) cans organic pinto beans (drained, rinsed)
    1 (15 oz) can organic black beans (drained, rinsed)
    1 (28 oz) can diced tomatoes
    1 (12 oz) can Rotel diced tomatoes with green chilis
    puree to make a mock tomato sauce
    1 tbsp. tomato paste
    2 tsp chili powder
    water (I used 1/4 to 1/2 cup for a thicker recipe. Some suggest 2 cups water for crocking this dish)

Directions

Add chopped onions and green peppers to medium-large pan, sprayed with oil spray; cook until onions are translucent and peppers are soft. Add ground meat (mine was already cooked), garlic powder, onion powder, salt and pepper and saute until beef is thoroughly cooked and no longer pink.

Add in remaining ingredients and stir to combine.

Cook for an hour so that tomatoes have time to break down and sauce can thicken.

This can be cooked in a crock pot on high for 4 hours or low for 6-8 hours.

Optional toppings: thinly sliced jalapeno peppers, shredded cheese, diced green onions, plain Greek yogurt.

Serving Size: makes 12 heaping ladle servings
