Ingredients

I lb of Shrimp peeled and deveined
I large roll of goat cheese
I lb of Pasta
I Lemon
Salt
Pepper
1 tablespoon Extra Virgin Olive Oil
Tips
I like whole wheat pasta and I use mini bowties or mini penne.
Directions
Put Pasta water on stove to boil
Peel, devein and rinse the shrimp
Dry shrimp with clean kitchen towel or paper towel
Add EVOO to cast iron skill
Season shrimp with salt and pepper
Add shrimp to hot skillet and sauté until shrimp is done once shrimp is done zest lemon and then add the juice to shrimp.
While the shrimp is cooking cook pasta to Al'dente
Drain Pasta reserving about 1 cup of the pasta water
Add pasta and goat cheese to bowl and mix well until goat cheese is melted using reserve Pasta water to thin out goat cheese into a creamy sauce.
Add Shrimp and stir to incorporate into pasta and goat cheese.
Garnish with freshly chopped parsley and enjoy.
