Introduction

Ingredients

*Yukon Gold Potatoes (1 potatoe about 5oz), 25 oz (about 5 medium potatoes chopped into inch size pieces)
*1 cup onion chopped
*Garlic, minced, 2 TSP
*Butter, unsalted, 1 tbsp
*Extra Virgin Olive Oil, 1 tbsp
Chicken stock, home-prepared, 3 cup (I use Duck stock, but that isn't an option on here choice is yours)
Kale, .5 cup, chopped
Spinach, frozen, 0.5 cup
Yellow Sweet Corn, Frozen, 0.5 cup kernels
*Diamond Crystal - Kosher Salt, 0.5 tsp
Pepper, black, .5 tsp
Thyme, ground, 1 tsp
Fat free half and half, .5 cup
Milk, nonfat (skim milk), 1 cup
Directions
Add butter and olive oil over medium heat in your pot and then add the potatoes and onions. This takes some patience.
I roast the potatoes and onions together. I like the edges a little brown when I know its time to add the liquids.
Then add the rest of the ingredients, bring to a boil and then reduce heat to a simmer for about 10 minutes.
***I use a potato masher to leave this chucky and not quite smooth. You may puree this recipe for super smooth, but I suggest you do that before adding the kale, spinach and corn. Or you can leave it completely chunky and do nothing further.
Serving Size: Makes 6 serving as main course, can be 8-10 servers if its server as an appetizer
