When I went gluten and dairy free for sensitivity reasons, I had to figure out how to make things dairy free. Here is my take on a recipe I found online - I cut it in half and used a couple of different ingredients. Here is my take on a recipe I found online - I cut it in half and used a couple of different ingredients.

Ingredients

    1 cup cooked chicken, diced
    2 Tbsp. Smart Balance Light Spread
    3/4 tsp. onion powder
    1/2 tsp. salt
    1/8 tsp. ground black pepper
    6 Tbsp. coconut flour + 3 Tbsp. extra chicken broth
    3/4 cup reduced sodium chicken broth
    3/4 cup unsweetened almond milk

Directions

1. Melt Smart Balance spread, add in onion powder, salt and pepper.
2. Stir in coconut flour and 3 tbsp. chicken broth and cook for a minute or two.
3. Add in chicken broth and bring to a simmer.
4. Add in almond milk and simmer until it thickens, about 12-15 minutes.

Serving Size: Makes about 2 cups
