Ingredients

TOPPINGS:
Crosse and Blackwell Chutney
1/2 cup raisins, soaked in water
1/2 cup chopped peanuts
1/2 cup pineapple tidbits
3 hard boiled eggs
6 slices bacon (consider turkey bacon) or bacon bits
3 Tbs coconut
CURRY:
3 Tbs butter
1 small onion, minced
1 1/4 Tbs curry powder
3 Tbs flour
3/4 tsp salt
3/4 tsp sugar
1/8 tsp ginger
1 cup chicken broth
1 cup skim milk
2 cups cooked chicken, turkey or shrimp
1/2 tsp lemon juice
1 cup uncooked rice, consider basmati or jasmine
1 cup green lentils
Tips
You may choose to try turkey or shrimp instead. We tried this once with Krab. Just...don't. That is all.
Directions
Cook rice and lentils according to package directions and soak raisins in warm water. Meanwhile, melt butter and saute onion with curry powder in a large skillet. Blend in flour and other seasonings. Stir and simmer until smooth and bubbly; remove from heat. Stir in broth and milk, then add protein. Bring to a boil, stirring constantly then simmer for one minute. Add lemon juice, then spoon over half rice, half lentil base.
Serve condiments at the table and allow diners to top their curry to their liking.
