Introduction

Ingredients

1 whole cut up chicken (no back or giblets, about
3 lbs)
1 large can of peeled tomatoes
1 whole bell pepper, seeded and cut into chunks
2 Tbsp minced garlic
1 large onion, diced large
1 med can quartered artichoke hearts, drained
2 Tbsp olive oil
Directions
Heat oil in Dutch oven.
Lightly brown chicken pieces, about 5 minutes per side. Remove from pan and keep warm.
Add onion to pan and saute until semi-translucent. Add garlic and saute 1 minute more.
Put chicken back in Dutch oven and add tomatoes, bell peppers, and white wine.
Bring to boil and then turn down the heat to simmer.
Simmer, covered, 40 minutes.
Add drained artichokes and let simmer, uncovered, 15 minutes.
Serve!
