Ingredients

    1 lb Beef roast
    2 lg russet potatoes in chunks
    1 c petite baby carrots
    1/2 yellow onion in chuncks
    2 cloves garlic diced
    1 c chicken broth
    1 can petite diced tomatoes
    salt and pepper to taste

Tips

Beef roasts are more than 1 lb. typically. I take 1 lb aside after cooked to make 4 servings. The rest I store in the fridge for another use later. (Beef barley stew or sandwiches - lots of other options too!)


Directions

Salt and pepper roast, sear on all sides. Add to crock pot and dump everything else on top. Cook on low 8 hours or til falling apart.
