Introduction

Ingredients

    2 1/8c skim milk
    1 14oz can (1 7/8c) light coconut milk, chilled (I used Trader Joe's)
    1 pkg sugar free,fat free Jello instant pistachio pudding

Tips

The instructions for my Cuisinart say it takes 20 minutes to freeze the ice cream, I typically run the machine for 30 minutes. This recipe didn’t “swell” as much as a fuller cream ice cream recipe does in this ice cream maker...it does make a little more than the 8 servings I listed, but it’s hard to scrape all the ice cream off the frozen urn, etc, so the serving size is rounded off.


Directions

Have ice cream machine bowl chilled according to directions. Mix pudding mix into milk in large 4 cup measuring cup; add coconut milk and blend. Pour into ice cream maker and chill! Enjoy!

Serving Size: makes 8 - 1/2c servings
