Ingredients

    1 ½ lb. Chicken Breast
    32 oz. Chicken Stock
    14.5 oz. Can Diced Tomatoes
    1 Medium Yellow Bell Pepper – Diced
    1 Medium Orange Bell Pepper – Diced
    1/2 Medium Red Bell Pepper - Diced
    2 Medium Onion – Diced
    8 oz. Mushrooms – Thinly Sliced
    4 Large Cloves Garlic – Minced
    4 Tbs. Taco Seasoning
    1 Tbs. Garlic Salt

Tips

Serve with a dollop of sour cream or plain greek yogurt, a sprinkle of shredded cheddar cheese, and/or cilantro for an extra kick.


Directions

Put all ingredients in slow cooker.
Set to low.
Cook covered for 6 hours.
Using two forks, shred chicken.
Re-cover and cook an additional hour before serving.
