Ingredients

    • 2 cups of wholemeal plain flour
    • 3/4 cup of chocolate Bsc protien powder
    • 1/2 tsp baking powder
    • 3/4 tsp cinnamon or ginger or allspice
    • 4 medium bananas +(set one aside for slicing on top)
    • 2 eggs
    • 1/3 cup honey or raw sugar
    • 1 tsp vanilla
    • pinch sea salt
    • • Coconut oil for greasing

Directions

. Preheat your oven to 180C.
2. Lightly grease your muffin pan with the coconut oil.
3. Sift together the dry ingredients: almond meal, protein powder, baking powder, salt, spices.
4. Using an electric mixer or whisk blend together bananas, eggs and honey/sugar until fluffy.
5. Fold in dry ingredients.
6. Fill a muffin pan with batter. Fill most of way as they will not rise too much.
7. Tuck 2-4 chocolate chips in each muffin or sprinkle with shavedcoconut . Just a little goes a long way in this muffin.
8. If you slice bananas and place on top now they will look like the picture below. You may wish to wait until they have cooked halfway and they will look closer to above pic.
9. Bake 30-35 minutes until a toothpick comes out clean. These WILL cook a bit while cooling. Go easy on them.
10. Makes 12 little treats
