    1/2c dry Old Fashioned Quaker Oatmeal- Plain
    1c Stevia
    1 1/2c Protein powder (I used cinnamon roll)
    2tsp Cinnamon, ground
    2tsp Nutmeg, ground
    2tsp Baking Powder
    2 tsp Baking Soda
    2 tsp Allspice

    Mix ingredients in blender

    Then add...
    2c Almond Milk, Vanilla
    2 Egg
    6 Egg whites

    Mix in blender just until blended.

    Then stir in...
    8 Medjool dates, chopped
    1c carrots, shredded

    For frosting...
    2c Greek Yogurt, Plain,
    1scoop Protein powder (again cinnamon roll flavor is the bomb)
    Stevia if desired
    Mix together

    Adding chopped walnuts on top is stellar, but I did not add it in the nutrition value.


The center of the cake will look somewhat wet. Let cool and it will stiffen up. Do not overbake. Protein Powder does not like to be overbaked.


Pour in greased 9x13 pan.
Bake @ 350 degrees for apx 25-30 minutes or until golden brown.
