Ingredients

1 1/3 cup flour
1 cup icing sugar
3 super ripe bananas
125 gm butter (unsalted and softened at room temp)
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1/4 cup walnuts (can use almonds and raisins too)
extra butter for greasing loaf tin
Tips
The cake may cook more on the outer edges but trust me, that part tastes the best.
Opt for icing sugar for better results.
Can use almonds and raisins too.
Directions
Cream butter and sugar together
Add eggs one by one and mix well
Add the mashed ripe bananas and vanilla essence
mix all dry ingredients together (1 1/3 cup flour, baking soda and salt)
Add to the wet mixture and mix well
Combine the nuts and fold
Pour in a greased loaf tin and bake in a preheated oven at 180 degree centigrade for approx 50-55 minutes.
Check with a wooden skewer before removing from oven and cool completely.
Serving Size: Makes 8 Slices in a loaf
