Ingredients



    2 eggs, slight beaten

    1/2 cup white sugar

    1/2 cup vegetable oil

    1 cup persimmon pulp

    1 teaspoon baking soda

    3/4 cups all-purpose flour

    3/4 cups whole wheat flour

    1/2 teaspoon salt

    1 teaspoon ground cinnamon

    (Optional): 1/2 cup chopped dates, raisins or craisins, not included in nutrition info

Directions

Preheat oven to 325.

In one bowl, thoroughly mix eggs, sugar, oil, persimmon pulp and baking soda.

In another bowl, stir together flours, salt, cinnamon and chopped fruit, if desired. Blend the dry ingredients into the wet, and pour into prepared 8x4 loaf pan.

Cook at 325 for 60-75 minutes.
