Ingredients

    500 grams ground very lean pork, ideally, mixed with 2 tsp Penzey's Italian sausage seasoning--you can use Italain sausage, but it adds a lot of fat
    1 chopped medium onion
    3 choppped cloves garlic
    1 15 oz can diced tomatoes
    1 6 oz can tomato paste
    1 16 oz can tomato sauce
    1 cup water-or more for consistency
    1.5 tsp basil
    1.5 tsp oregano
    1 tsp sugar
    .5 tsp salt
    .25 tsp pepper
    .25 tsp red pepper
    .25 cup good red wine

Directions

Makes 6 big servings, but add pasta calories separately.

Mix the ground lean pork--I grind it myself, with the Penzey's Italian sausage seasoning, brown in a big pot, sprayed with a little PAm.

Add the rest of the ingredients and cook low for at least 1.5 hours, stirring occasionally.

Serve with pasta, add calories separately for it and Parmesan cheese if you like.
