Ingredients
-
2 chicken breasts
1 cup of mozzarella cheese
10 pieces of bacon
4 medium Idaho Potatoes
1 cup of milk
2 tsp. of salt and pepper
1 stick of butter
Tips
Make sure that the chicken is cooked thoroughly all the way through before eating.
Directions
1. First you place the chicken on a cutting board, season the chicken with pepper and salt (however much you like) then make an incision along the side of the chicken, enough to be able to put something inside, then you take a hand full of mozzarella cheese and stuff the chicken with it.
2. Next, you want to pan sear the chicken just enough so that the outside is brown, then you take the chicken out and wrap it in bacon.
3. Bake at 400 degrees for 45 minutes (turn halfway through) then after the 45 minutes are up, turn the temperature up to 500 degrees to make the bacon crispy (make sure you watch it).
4. Now, put 4 medium potatoes in a pot to boil, when you are happy with the softness of the potatoes drain the pot. Next, add milk and butter to the potatoes. Mix with a hand mixer until the potatoes are at the consistency you best prefer. Season the potatoes with salt and pepper (however much you like).
