Ingredients

    1 lb lean ground beef
    2 c diced bell peppers (yellow, red, orange)
    1 (4oz) can diced green chilies
    1 can fat free refried beans
    1pkg taco seasoning mix
    1 (10oz) can enchilada sauce
    2 cups shredded taco style cheese blend
    12 small flour tortillas
    2 T minced onion
    cooking spray

Tips

Use whatever peppers you like. Fresh onion would be better I was out. Ground turkey would lower calorie count even more.


Directions

Heat oven to 400. Brown ground beef, peppers and chilies and minced onion until done. Drain. Add in refried beans and taco seasoning with water called for on pkg. Bring to boil,reduce heat and simmer 5 minutes.

Spray baking dish with cooking spray. Put a little of sauce in bottom of pan. layer the tortillas, beef mixture and cheese until you get 3 layers. Pour rest of sauce on top and a little sprinkle of cheese. Bake 30 mins. Let sit 5 mins before cutting into 8 equal pieces.
