Ingredients

    Fresh Asian greens, 5 - 6 cups (not chopped)
    Firm or Extra firm tofu, 1/2 block (about 8 oz)
    Fresh snow peas, about 1 cup
    Garlic, 3 cloves, diced
    Pearl oyster mushrooms or other mushrooms, sliced, about 3/4 cup
    Canola oil, 2 tbsp
    Fish sauce, 2 tsp
    Sugar, 1 tsp
    Brown rice vinegar, 1 tsp
    Black pepper, 1/4 tsp ground

Tips

Cooking times and measurements for fresh produce are approximate. I threw this together to use fresh produce from the local farmers market and it turned out to be good enough that I wanted to save the recipe.


Directions

Pre-heat skillet on medium heat.
Drain and cut tofu into rectangular chunks about 1/2 inch thick. Add 1 tbsp oil to skillet, cook tofu chunks on medium heat until crispy golden on each side and set aside (15 min)
Add 1 tbsp oil and 1 tsp fish sauce to pre-heated skillet (medium high heat). Saute garlic and mushrooms for about 5 minutes. Add snow peas and cook 3 min. Mix remaining fish sauce, sugar and vinegar, add to skillet along with greens, and top with black pepper. Continually turn over greens to mix and cook. When greens are beginning to cook down, add tofu and cook until greens are completely wilted. Good with brown rice on the side.

Serving Size: Makes 2 servings, about 1 cup each
