Introduction

Mini Egg foo young in a mug. Inspired by Hungry Girl's "Mug Foo Young" I made this with the limited time and resources in the break room at work. Feel free to add some shredded chicken breast for a chicken egg foo young, or use vegetable bouillon for a vegetarian version. Mini Egg foo young in a mug. Ingredients

    6 Tablespoons Liquid Egg White
    1.5 Tablespoons Red Onion, Diced
    2 Tablespoons Bok Choy, Diced
    1 Tablespoon Green Onion, Sliced
    1 Tablespoon Carrot, Shredded
    2 Tablespoons Bean Sprouts, chopped
    1 Tablespoon Soy Sauce
    Pinch Chicken Bouillon

Directions

mix all ingredients in a large mug and microwave for 3 minutes, or until cooked through
