Ingredients

2 TB. butter
2 TB. chopped garlic
1/2 c flour
1 tsp. bacon fat
1/4 c. flavorless olive oil
2 c. milk
3 c. chicken broth
2 c. half and half
4 large baking potatoes
1 tsp. hot sauce
1 TB. parsley
1 celery stalk chopped fine
1 carrot chopped fine
1/2 cup chopped fine onion
1 1/2 c. extra sharp cheddar
6 slices cooked bacon & crumbled
3 TB. sour cream
slat and pepper to taste
pinch hot pepper flakes
Tips
I have used canned milk in this recipe when I am short on milk. I think I prefer it!
Directions
In a large soup pot over medium heat add olive oil, butter, and bacon fat. When butter melts add carrots, celery, onion and garlic. Cook till fragrant. Then add flour. (if necessary add more oil) Cook for minute.
Gradually add milk, broth and half and half. Stir till it thickens slightly. Add hot sauce, parsley, bacon, cheese and sour cream. Reduce heat and simmer for 5 minutes. Add cooled potatoes ( skin on or off) and remaining ingredients.
