As a low carber, grain free brain & every other day faster. I was really hungry for an Egg McMuffin. Tried the Atkins one, they are good but ran out of them & don’t like how they slide off. So I made 2 mini muffins & 4 Tortilla Pan As Seen On TV because I thought I could make the bottom or top of the muffin crunchy. Yipee they sure were. I'm going to freeze a bunch. I might take out the olives (just through them in) it brought the salt content up. No more sliding. However, maybe I'll put an egg & American cheese between them or on top. Hmmm :) Or pizza flavor, mushroom, Thai paste, or garlic cheese the possibilities maybe more flax into mini loaf pans for some good old fashion bread an butter or pizza crust ;) This create a recipe calculator is fantastico As a low carber, grain free brain & every other day faster. Ingredients

Ingredients:
Cheddar Cheese, 2 oz
Salt, .25 tsp
Canadian Bacon, 1 package (6 oz) yields 6 slices
Eggs - Jumbo Grade A Eggs - California Ranch Fresh - 1 Egg = 1 Serving (63g), 2 serving
Bacon grease, 6 tsp
Cream Cheese, 2 oz (1/4 cup) soften or room temperature
Green Olives, pitted, .5291 oz (6 olives)
Fresh Chives, 2 tbsp chopped
Bob's Red Mill Coconut Flour, 3 tbsp
Baking Powder, 0.25 tsp
Bob's Red Mill - Organic Whole Ground Flax Seed Meal, 0.25 tbsp

Directions
Serving Size: 6
Preheat oven to 400 degrees.
Put everything in Mini blender except! The Dry Ingredients (they are last)
The Salt blends well with the eggs, the bacon grease (had some left over)
The Cream Cheese, the Green Olives, the Fresh Chives
The cheese only 1 oz., 2 slices of Canadian bacon
The Cream Cheese, the Green Olives, the Fresh Chives Blend it all.
Dry Ingredients
Add coconut flour and baking powder and Flax Seed Meal. Mix it up then sift it through a normal strainer (don’t have a sifter) the key is no lumps. Pour into filled Mini blender and blend
Preparing for the oven
Grease with coconut oil. I used those mini silicon muffin & the bottom of the Tortilla Pan as Seen on TV to make a bottom of muffin height. Or you’re chosen baking muffin pan/mini loaf pan.
Pour everything in (grate more cheese and the half/quarter slices of Canadian bacon on top)
Bake for 15 minutes to 17 minutes. (depending how crunchy you want it)
Let it rest
If anyone wants to create a microwave version go ahead don’t think it would be crunchy though.
Enjoy
