Introduction

Tasty Barley & Turkey vegetable soup that I make pretty often. Hubby loves it. He usually sprinkles a little Monterey Jack shredded cheese on top. Yum. The cheese is NOT calculated into the recipe. Ingredients

    1 tbsp. olive oil
    1 tbsp. minced garlic
    1 lb. ground turkey
    1 large onion
    1 32 oz. box reduced chicken broth
    1 cup white wine (chardonnay)
    1 bag frozen mixed vegetables
    1 can stewed tomatoes
    1 can petite diced tomatoes
    1/2 cup uncooked barley

Tips

Recipe nutritional information uses quick barley. Medium barley is a few more calories.


Directions

In large pot, heat oil and minced garlic, add and brown ground turkey. Chop onion, add to meat. Cook until translucent. Add chicken broth, wine, mixed veggies, both tomatoes and bring to boil, reduce heat and simmer for a about 45 minutes to let flavors blend. Add barley.
(quick barley - 10 min. before ready to serve or
medium barley - 40 mi. before ready to serve)

Serving Size: Makes about 6 large bowls of soup.
