Introduction

Ingredients

    1 cup Pillsbury All Purpose Flour
    1/8 tsp baking powder
    1/8 tsp baking soda
    1/2 tsp pure vanilla extract
    1/4 tsp ground cinnamon
    1/4 cup Craisins dried cranberries - chopped finely
    1/2 cup Libby's 100% pure canned pumpkin

Directions

Combine flour, soda, powder and cinnamon. Stir in Craisins and vanilla, combine thoroughly. Gradually cut in pumpkin to form a tough sticky dough. Spray a small amount of olive oil onto paper towel. Wipe onto cookie sheet. Wipe clean with fresh paper towel. This is to eliminate most of the fat, so it doesn't transfer to the cookies. Drop dough in 1 tsp sized balls onto sheet. Flatten with fork. Bake for approx 35 minutes at 350, or until crunchy. Cookies do not spread, so all 20 will fit on one sheet.
