Ingredients

2 links of sweet Italian turkey sausage
1 red bell pepper, sliced thinly
1/2 red onion, sliced thinly
1 tablespoon olive oil
4 oz. whole wheat pasta shells
2 carrots, peeled and sliced
1 cup frozen peas
25 oz. jar chunky low-sodium tomato sauce
4 tablespoons parmesan cheese
Directions
Heat olive oil in large skillet over medium heat. Add peppers and onion. Cook until tender and turning brown on edges. Remove from skillet and keep warm.
Meanwhile, bring 5 cups of water to a boil in a deep pot. When boiling, add carrots and shells. Cook for 9 minutes. When 3 minutes are left, add peas and return to boil. Drain at end of cooking time, reserving 1/2 cup of pasta water.
Add turkey sausage links to skillet. Brown according to directions, 5-7 minutes. Remove from skillet and slice. Return sausage to skillet and continue cooking if needed. Return peppers and onion to skillet. Add sauce and heat through. Stir in pasta shells, carrots, and peas. Add pasta water as needed to thin out sauce.
When heated through, divide pasta mixture between 4 bowls and top with 1 tablespoon of parmesan cheese.
