Introduction

Number of Servings: 14

Ingredients

    2 pounds dry great northern beans
    1/2 pound cooked ham, diced
    1 small onion, diced
    1/2 cup diced carrots
    1/2 cup brown sugar
    1 teaspoon (or less) to taste
    1 tablespoon dried parsley
    salt and pepper to taste

Directions

1. Rinse beans in a large pot; discard shriveled beans and any small stones. Add 16 cups of cold water and soak overnight or at least 8 hours. Drain and rinse beans.
2. Return beans to large slow cooker and add ham, onion, carrots, brown sugar, cayenne, parsley, salt and pepper. Add water to cover. Cook on low for 6-8 hours, then on high for 2-4 hours until beans are tender. Add Wondra or a flour and water paste to thicken if desired. Add more water if necessary during cooking time.
