Ingredients

    1 Scallion or Spring/Green Onion (medium - minced)
    2 cup Baby Spinach
    3 oz Shrimp, Small (100-150 / lb) (minced)
    1/8 cup Bamboo shoots (minced)
    1/3 tsp Kikkoman Lite Soy Sauce
    12 Tbsp Better’n Eggs - lightly whipped/beaten)

Tips

Not quite traditional, but yummy and simple to make.


Directions

1) Mix eggs, vegetables, shrimp, and soy.

2) Spray Pam in a 4-6 inch skillet over moderate heat for 30 seconds.

3) Add 1/2 egg mixture and fry as you would a pancake until lightly browned on the bottom, turn over and brown flip side.

4) Keep warm (but do not stack), while you fry remaining pancake, stirring egg mixture before adding to pan.


Serving Size: Makes 2 "pancakes", 1 per serving
