Introduction

Ingredients

    1 package thick-cut bacon, chopped
    1 onion, diced
    garlic (to taste)
    1 package sliced baby portabella mushrooms
    5 cans reduced-sodium black beans, drained but not rinsed
    2 cans sweet kernel corn, drained
    diced chipotle peppers in ancho sauce (to taste)
    1-1/2 cartons chicken broth

Tips

I use a lot of garlic and half of a small jar of the chilies in my recipe, and it didn't require any extra salt or pepper.


Directions

Start chopped bacon, diced onion, garlic, and mushrooms in a large pot on medium-high heat. Let cook, stirring frequently, until bacon is almost done (maybe 5 minutes). Add beans, corn, and chilies; stir to combine. Add chicken broth. Bring to boil for 10 minutes, reduce to simmer for 20.

Serving Size: Makes at least 12 2-cup servings.
