Ingredients

    1 Head Cauliflower
    2 large eggs
    salt & pepper to taste

    Optional 1/4 cup chopped fresh cilantro
    Juice from 1/2 lime

Tips

I use Coconut oil which doesn't count fat wise as it is used as energy and not stored as fat. Can also bake them 10 minutes, flip and bake for 5-7 more minutes.


Directions

1. Trim cauliflower, cut into small uniform pieces, pulse in food processor in batches until it is couscous- or rice like consistency. About 2 cups packed.

2. Seam over hot water until cooked or microwave 2 minutes, stir and microwave 2 more minutes.

3. Drain into cheesecloth over a drainer, squeeze out as much liquid as possible, be careful not to burn yourself. Dishwashing gloves work well.

4. Whisk eggs add cauliflower, herbs and lime if used, salt and pepper. Mix until well combined.

5. Use hands to shape 6 small tortillas. Or pour into medium hot pan that has oil in it and fry for a few minutes and flip to finish other side.
