Introduction

I found this while on a low carb diet and my husband and I just love it. We serve it with either beans or brown rice. I found this while on a low carb diet and my husband and I just love it. We serve it with either beans or brown rice.
Number of Servings: 6

Ingredients

    2 lbs. Pork Tenderloin
    1 medium Jar of Salsa (mild to hot) your choice!
    1 small can of green chilies (now you can leave this out if you are not a "spicy" person)
    1 large Onion, sliced into large slices
    1/4 cup water
    1 tbsp. minced garlic
    Adobo seasoning for the pork



Directions

Take the tenderloin and rub it fully with the Adobo seasoning.
Add the Onion, and garlic.
top with the salsa and 1/4 cup water.
Set slow cooker on 6-8 hours and once done, take out the tenderloin and with 2 forks start shredding! Add the pork back into the salsa mixture and mix up. TA DA!
Makes about 6 1/2 cup servings.
