Ingredients

Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4 )
Onions, raw, 3 tbsp chopped
*Extra Virgin Olive Oil, 2 tbsp
*Bread Crumbs - Italian Style, 1 cup
* Fresh Parsley, 3 tbsp
* Garlic diced, 3 tsp
*President Fat Free Crumbled Feta, 2 oz
* 1 large egg
Tips
If cooking from frozen you may thaw and refry or microwave. The choice is yours.
Directions
Peel and slice eggplant. Microwave for 6 minutes until tender. Drain any moisture left on tray.
Mash eggplant (or use a blender)
In a large bowl combine all other ingredients.
Poor eggplant into combined mixture.
Fold/ Squish ingredients together and roll into six balls. Flatten into patties.
Warm a skillet with 2 Tsp Olive oil
Fry each pattie until golden on each side.
Pat excess oil away if needed.
Serve as is or store in freezer bags for future use.
