Ingredients

1 English cucumber, halved and seeded
1/2 poached chicken breast, shredded
1 Tbs diced pepper
1/4 c diced tomato
1 Tbs mayo
1 tsp yellow mustard
dill, S&P to taste
Tips
I'm picky about messy food, so I usually eat this as an open-faced "sandwich", and enjoy the topper separately...kind of like a side dish :)
Directions
Boil chicken breast in salted water until cooked through (time depends on thickness of the chicken, but doesn't take long). Shred with two forks immediately.
Cut cucumber in half crosswise, then lengthwise. Remove seeds with a spoon.
Blend all ingredients and fill half the cucumber. Top with remaining half to make "sandwich".
Serving Size: One serving is two cucumber "sandwiches"
