Ingredients

1 16oz pancit canton noodle (I use UFC Pancit Canton)
1 lb chicken breast tenderloins cut into cubes
3 carrots cut into strips
1 small onion chopped into strips
1 small green bell pepper chopped into strips
1 half small cabbage chopped into strips
5 cloves of garlic finely chopped
1/4 tspn kosher salt
1/4 tspn ground black pepper
3 cups chicken stock
1 tbspn light soy sauce
1/2 cup scallions finely chopped
Directions
1. Cook chicken for 3 on high heat in canola oil. Season with salt and pepper. Add soy sauce.
2. Add garlic, onion, carrots, green bell pepper, and cabbage. Sautee over high heat for another 5 minutes.
3. Add 2 cups of chicken stock and wait for it to boil. Reduce heat to medium.
4. Add the pancit canton noodles. Stir until noodles are soft.
5. Add the remaining 1 cup of chicken stock and this will soften the noodles more.
6. Raise the heat to high and once the chicken stock dries, you must start stir frying the noodles. Don't let the noodles burn so you must keep stirring until it dries out a little.
7. Turn of the heat and sprinkle scallions on top and mix well.
