Ingredients

2C red lentils
28oz can diced tomatoes
14oz can Lite Coconut Milk
1 onion
1 tablespoon mild curry powder
1 teaspoon ground ginger
5 C water
1/2 C plain, greek, yogurt (optional, for topping)
Chopped cilantro (for topping)

for additional spice, add
1-2 serrano chilies, minced
red pepper flakes
cayenne
Tips
1C of these lentils, over 3/4C rice with 1T plain greek yogurt is an incredibly-filling 350 calories, with 15g of protein! Add a chopped, hard-boiled egg and 1T sliced almonds for 100 more calories and 8g more protein!
Directions
Mix all ingredients in a large pot. Simmer for about an hour, stirring frequently to prevent sticking. Add more water if necessary to keep a thick/soupy consistency, like chili.
Top each bowl with a 1T dollop of plain greek yogurt, and a sprinkling of cilantro, if desired
