Introduction

Number of Servings: 4

Ingredients

    1 2/3 cups skim milk
    2 large eggs
    1/3 cup egg whites (Better'n eggs)
    1 Tbsp Olive Oil
    2 cups spinach
    1/2 cup zucchini, sliced
    1/2 cup asparagus pieces
    1 cup shredded mozzarella, part skim
    garlic powder, salt & pepper to taste

Directions

Preheat oven to 375. Heat olive oil in a skillet, add zucchini and asparagus. Saute until tendercrisp, about 5 minutes; add spinach. Cook until spinach is wilted. Mix in mushrooms and pour mix into the bottom of a prepared pie plate. Sprinkle with 1/2 the mozzarella. Mix the eggs, egg whites, milk, garlic powder, salt and pepper. Pour over the vegetables. Sprinkle with remaining mozzarella. Bake 20-30 minutes until a knife inserted into the center comes out clean. Cut into 4 pieces. Can be refrigerated or frozen and reheated.
