Ingredients

    1 tablespoon olive oil
    2 pounds chicken breasts
    3 large carrots finely shredded
    1 large onion chopped
    3 ribs celery finely chopped
    5 large garlic cloves chopped
    1 bay leaf
    2 cups chicken broth
    1/2 cup hot sauce
    1 (8-ounce) can tomato sauce
    1 (14-ounce) can diced tomato
    salt and pepper to taste

Directions

1. Place olive oil in a large pot.
2. Add the chicken. Brown it and break into small pieces.
3. Add the carrot, onion, celery, garlic, bay leaf, salt and pepper. Cook, stirring frequently for 3 - 4 minutes.
4. Add the chicken stock, hot sauce, and tomotoes. Bring to a bubble.
5. Simmer for about 30 minutes.
