Ingredients

    1 46 oz can of tomato juice form concentrate (reduced sodium)
    1 32 oz can of diced tomatoes (reduced or low sodium)
    1 32 oz container of vegetable broth
    3 med onions diced
    3 carrots sliced
    2 stalks of celery sliced
    1 can of black beans rinsed and drained (low sodium)
    1 13 oz can of mushroom stems and pieces drained
    1 10 oz bag of frozen broccoli
    1 12 oz bag of frozen cauliflower
    1/2 to 3/4 head of cabbage diced
    add seasoning to taste
    optional add in bouillon, careful of the sodium

Tips

sodium can be high if you do not select low or no sodium canned items


Directions

mix all ingredients in a stock pot, bring to a boil, simmer for about 90 minutes
