Ingredients

1 1lb boneless, skinless chicken breasts( or 4 chicken breasts)
4-6 oz. pepper jack cheese, shredded
1 c. frozen spinach (thawed and drained) (Or freshly cooked spinach)
2 Tbsp olive oil
1 Tbsp. breadcrumbs
2 Tbsp Cajun seasoning
Sea Salt (to taste)
Black pepper (to taste)
Lots of toothpicks
Directions
1. Preheat oven to 350 degrees F.
2. Flatten the chicken to ¼ inch thickness
3. In medium bowl combine pepper jack cheese, spinach, salt and pepper.
4. Combine Cajun seasoning, and breadcrumbs together in a small bowl.
5. Spoon ¼ c. of spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. (Be sure to count the number of toothpicks you use for each chicken breast.)
6. Repeat for each chicken breast.
7. Brush each chicken breast with olive oil.
8. Sprinkle Cajun seasoning mixture evenly over all chicken.
9. (Optional) Sprinkle any remaining spinach mixture on top of chicken
10. Place chicken seam side up onto tin foil lined baking sheet.
11. Bake for 35-40 minutes or until chicken is cooked through.
12. When done, remove toothpicks before serving.
Can serve up with a salad and fruit for complete low carb meal!
