Ingredients

4 Chicken Thighs, skinned removed
1.5 c. Barley (dry)
1 can tomato sauce
1 can tomatoes (whole or diced)
1/2 bell pepper
1/2 onion
1 can chick peas
2 garlic cloves
2 tbs chili powder
2 tbs cumin
2 tbs cajun seasoning
6-7 c. water
salt to taste
Tips
For vegetarians - ditch the chicken and add a pound of baby portobello mushrooms.
Serving size varies 1 - 1 1/2 cup portion.
Directions
Remove skin from chicken, season with garlic, cumin, salt, chili powder. Brown meat in 8-10 quart crock or pot for about 20 minutes, until chicken is done.
Remove chicken from bone and dice. Add chicken, bell peppers and onions and barley back to stock.
Add tomatoes, sauce and water and chick peas. Bring to a boil, then reduce heat to simmer for another 20 minutes.
Serving Size: Makes 8 1 cup servings
