Ingredients

    15 oz can pumpkin
    1/2 c egg beaters
    1 c almond breeze vanilla milk
    2 tsp cinnamon
    1/2 tsp ginger
    1/2 tsp nutmeg
    1/2 c splenda sugar blend

Directions

mix all together in microwave safe bowl with whisk. microwave for 8 - 10 mins, checking halfway through. yum!!

    I used Stevia & a small amount of brown sugar instead of Splenda mix. Put it in a 9x13 (didn't microwave), topped with a yellow cake mix & a little butter. baked @ 350 for 1 hour. Pumpkin Crunch Cake. Any ideas to lighten up cake & butter? - 12/8/10
