Ingredients

2 bags (454 grams) Dry Lentils
1 QT (4 cups) Organic Vegetable Stock
1/4 cup minced garlic
2 cups minced onions
3/4 cups fresh green bell peppers
3/4 cups fresh red bell peppers
3/4 cups fresh yellow peepers
1/4 cup soybean iol
4 cups water
2 tbps Coriander leaf dried (Cilantro)
Directions
1. Wash lentils.
2. In a big bowl cover with water and let soack for 1-2 hours.
3. Remove soaking water and wash again.
4. Place in slow cooker. Turn on high.
5. Add vegetable stock and water.
6. Sautee garlic and peppers until slightly brown.
7. Add tomatoes, let simmer until tomatoes lose their color.
8. Pour mixture into lentils.
9. Let cook for 6-8 hours.
