Introduction
Just the regular, quick lasagna I make for my daughter Emily, who is a die hard carnivore and loves her pasta. I'll chop up whatever extra veg is in the fridge and add to the meat sauce. Ingredients

12 lasagna noodles
3 cups marinara sauce
8 oz ground beef, extra lean (15% fat)
1 large carrot, finely chopped
1/2 onion, chopped
2 cloves garlic, minced
1 small zucchini, chopped
1 cup mushrooms, chopped
4 cups mozzarella
2 cups cottage Cheese, 2% Milkfat
1 large egg
Seasonings - oregano, basil, S&P, nutmeg to taste
Tips
This is a GENEROUS serving of a recipe I still make in it's original form. Some things can't be messed with. Half the serving size and double up on your veggies on the side to keep it more SP friendly ;)
Directions
Preheat oven to 350F.
Cook noodles. Scramble fry meat and veg. Add sauce and season to taste.
Blend cottage cheese and egg. Season to taste....oregano and basil, too!
Layer noodles, cottage cheese mix, 1 cup mozzarella noodles, meat mix, noodles, 3 cups mozzarella.
Bake at 350 for about 45 minutes or until cheese is nice and bubbly.
Let the lasagna rest for at least 10 minutes before serving.
Serving Size: makes 8 servings (about 4X4)
