    2 cups zucchini, sliced into quarter in rounds
    2 Tbsp. Panko bread crumbs
    2 Tbsp. Grated Parmesan Cheese
    1 Tbsp. Olive oil
    salt and pepper to taste

    Preheat oven to 400

    Pour oil into a ziplock bag. Add the zucchini and be sure each round has a light coating of oil.

    Mix the bread crumbs, cheese, and seasonings in a bowl.
    Place the rounds into the bowl a few at a time and coat with mixture. Pressing to adhere. Coating will be light.

    Lay out the rounds on a foil covered cooking sheet in a single layer. Sprinkle remaining crumb mixture over the rounds.


Bake for about 22 - 27 minutes, until golden brown. There is no need to flip them during baking - they crisp on both sides as is.
