1lb 93% lean ground turkey
2 stalks celery, chopped
5 shallots, diced fine
2 bell pepper, chopped
1/2 red onion, diced
1 head iceberg lettuce, shredded
3 jalapeno pepper, diced
1 14.5oz can low sodium black beans, drained
5 oz quinoa, uncooked
10 servings Red Hot Blue tortilla chips (110 chips)
taco seasoning packet
sauce:
8 oz plain greek yogurt or fat free sour cream
14.5oz can diced tomatoes with jalapenos
1 can salsa (8 oz)
3 tsp lime juice
16 tsp sriracha hot sauce
fresh cilantro
cumin
chile powder
paprika
Tips
Can add corn or cheese if desired.
Directions
Prepare quinoa according to package (takes about 15 minutes). Meanwhile, cook turkey in skillet with taco seasonings. Add black beans towards the end to heat up. Stir quinoa into turkey and black beans.
Mix together all sauce ingredients.
Mix all veggies together. Add quinoa and turkey when done. Top with sauce and crushed tortilla chips.
