Introduction

Number of Servings: 6

Ingredients

    4 oz chopped green chiles
    3 T olive oil
    2 lbs shredded chicken
    2 T chili powder
    2 t ground cumin
    1/2 red onion
    1 - 15 oz can black beans
    14 oz can fire roasted tomatoes
    1 c frozen corn kernels
    salt
    6 Joseph's Tortillas
    2.5 c fat free or reduced fat shredded cheddar cheese

Directions

Preheat oven to 425 degrees F
Preheat large skillet over med-hi heat
Add 1 T olive oil; swirl around pan
Add chicken & season with chili powder, cumin & red onion
Brown meat 5 minutes
Add fire roasted tomatoes
Add black beans & corn
Heat mixture through 2-3 minutes then season w/ salt to taste
Spray 13 x 9 pan with cooking spray
Cut tortillas in in half or quarters to make them easy to layer
Build lasagna in layers of meat & beans then tortillas then cheese
Repeat: meat, tortilla, cheese again.
Bake lasagna 12-15 minutes until cheese is brown & bubbly. Enjoy!
