Introduction

From Cooking Light's Diet. I added black beans for a little extra protein and fiber, a red onion for flavor. Try seasoning the chicken (without oils, or salts) From Cooking Light's Diet. Ingredients

    Chicken Breast (may season with garlic powder, cumin, cayenne for a little extra kick!)
    Black Beans
    Black Bean Dip
    Salsa
    Cheese (mexican blend or colby jack)
    4 tortillas (8 inch)
    1/2 Red onion (diced)

Directions

Bake chicken, shred while it is still warm. Mix chicken with 1/4 cup salsa in bowl. Spread 1/4 cup of black bean dip over tortilla. Sprinkle with onions, black beans, 2 tbsp cheese. Repeat for all tortillas. Layer in a dish (spray with cooking spray). Cook for 10 minutes or until cheese is bubbly. Cut into 4 pieces.

Serving Size: Makes 4 servings (cut pie into quarters)
