Ingredients

2 1/4 cups Old fashioned rolled oats
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
1 tsp baking powder
2 tsp vanilla extract
1/2 cup egg beaters (can substitute for 2 eggs)
1 3/4 cup coconut milk
1 cup Fresh diced apple
1 cup Fresh diced pear
Tips
To reheat from frozen, heat the oatmeal in the microwave for 30 seconds at a time until heated through or bake in the oven at 350ºF for about 15 minutes.
Directions
Preheat oven to 375ºF.
Combine the oats, spices, and baking powder in a medium bowl.
In another bowl stir in the milk, vanilla, applesauce, and eggs beaters then pour the wet mixture into the oat mixture.
mix in the pears and apples.
Spray a 9X13 baking dish with oil or cooking spray. Pour oatmeal into the baking dish and bake for 45 minutes, or brown.
allow the oatmeal to cool, then cut it into 8 pieces.
you can freeze these let them fully cool and divide evenly wrap in plastic wrap or put in freezer bag.
