Ingredients

    1/4 each Red, green, yellow and red peppers
    1-1/2 cups mushrooms sliced
    1 zucchini diced
    1/2 onion sliced
    1 tbl Olive oil
    2-3 tbl balsamic vinegar
    2 tsp dijon
    dried oregano, basil and thyme
    S & P

Tips

I make an egg white frittata with these, or toss them in wheat pasta.


Directions

Whisk dressing ingredients, add vegetables and toss, let sit for an hour, bake 350 30min or until desired doneness.
