Ingredients

    1 small spaghetti squash- cooked- 4 cups of strings
    1Tbsp Olive Oil
    1/2 cup finely chopped onion
    4oz 93% lean ground beef
    1 medium Roma tomato- 3oz
    3/4 cup commercial spaghetti sauce- I used Hunt's Four Cheese
    1/2 cup Italian blend shredded cheese

Directions

Heat oil in medium skillet. Add onion and cook until almost translucent. Add ground beef, crumbl & cook until brown. Add tomato, cook for 2-3 minutes longer. Add sauce & remove from heat. Divide spaghetti squash into 4 portions of 1 cup each. Add 1/3 cup sauce to each portion, & top with 2Tbsp shredded Italian blend cheese.

Serving Size: Makes 4 servings- 1 cup squash plus 1/3 cup sauce plus 2 Tbsp cheese
