Ingredients

    2 bags of fresh spinach cleaned
    2 red bell peppers (medium to large) cleaned and halved
    4 tbsp cream cheese
    1 cup shredded reduced fat cheddar
    1 clove garlic minced
    salt and pepper to taste

Directions

Heat oven to 350 degrees. On stove top steam spinach just until wilted and still bright green. In large bowl mix spinach, cream cheese, 3/4 cup cheddar, garlic and salt and pepper. Place peppers on broiler pan filled with water. Bake peppers 20 mins. Remove peppers from oven and allow to cool for 10-15 mins. Spoon mixture into peppers and place back on broiler pan. Sprinkle remaining cheddar on top. Bake for another 20 mins till filling is bubbly and red pepper is tender. Makes 4 servings.

    What a great idea. I'm not fond of green peppers, but will eat red ones and the combination of ingredients sounds yummy. I'll try it out this weekend. - 4/18/08
